Italian Love Cake

I made this cake for my sister, Linda, for her birthday.  Since her birthday is later in August, we celebrate all month.  I did not cut a slice because I wanted her to see it first.  This cake was just yum!!! Happy Birthday little sister!

Oh, everyone asks me why this is called “Italian Love Cake?” I don’t really know, but have been told they serve this at Italian weddings.  You will fall in love when you eat this cake!

Italian Love Cake

Ingredients:

1 Chocolate Cake Mix (Devil’s Food)
4 Large Eggs
1 Teaspoon Vanilla
2 Lbs. Ricotta Cheese, Part Skim
¾ Cup Sugar
1 – 8 oz. Container Cool Whip
1 – 3.4 oz. Box Instant Chocolate Pudding
1 Cup Cold 2% Milk

Topping:

Mix chocolate pudding with milk. Fold in Cool Whip

Instructions:

Preheat oven to 350 degrees
Grease and flour 13×9 baking pan
Mix Chocolate Cake Mix according to directions on box.
Pour into bottom of prepared 9×13 baking pan.
In separate bowl mix ricotta cheese, eggs, vanilla and sugar.
Pour over cake mix.
Bake for 1 hour or more.  Might need up to 20 minutes more baking time.
Cake and Ricotta mixture will invert during baking.
Cake is done when toothpick test comes out clean.
Let cake cool. Could take 4-6 hours to completely cool.
Ice cake with Cool Whip topping.
