Grandmom's Meatball Recipe
Ingredients
Extra-virgin olive oil
1 large onion diced
1 pound ground chuck
2 large eggs
1/2 cup Parmigiano Reggiano
1/4 cup Italian parsley finely chopped
2 slices stale bread cubed
1/2 cup Italian bread crumbs
1/2 tsp. garlic powder
Salt and pepper to taste
Your favorite tomato sauce
Directions
In a large bowl combine 1/2 cup diced onion and other ingredients (except for tomato sauce). It is best to use your hands to mix the ingredients. Then shape the meat into large meatballs kneading them well so they will not fall apart in the sauce. Coat a frypan with olive oil. Brown the meatballs on all sides. In the meantime in a large sauce pot heat up your favorite tomato sauce. After the meatballs are browned add to sauce. Use drippings from meatballs and saute the remaining 1/2 cup diced onions; add to sauce. Cook sauce for about 1-2 hours.
Yields: 20 meatballs
Serve with pasta.

Frankie's Pumpkin Pancakes
Ingredients
4 eggs
1 cup half and half
2 Tbs. melted butter
1/4 cup sugar
1 cup flour
2 tsp. baking powder
1 cup pumpkin puree
1/2 tsp. nutmeg
1/8 tsp. cinnamon
Directions
Combine all ingredients into a mixing bowl. Stir with fork until all ingredients are combined. Pour onto a hot griddle that has been coated with cooking spray. Cook until golden brown. Serve with your favorite syrup.
